Wayanadan pothumkaal, or beef bone marrow cooked in a rich, spiced masala, has become one of the most talked-about dishes on social media. Food lovers from across Kerala flock to the scenic hills of Wayanad to savour this flavour-packed delicacy. The aroma of spices and the tender, slow-cooked meat promise a memorable culinary experience.
But you don’t have to travel all the way to Wayanad to enjoy it.
A small eatery in Kollam is now serving beef bone marrow in the same style. Vayaloram Porotta, run by Muhammad and his sons, is nestled beside lush paddy fields in the heart of Kollam. It specialises in local fare, including freshly made porotta and beef bone marrow.
Porotta, cooked over a traditional woodfire stove, and beef bone marrow simmered for hours in a deeply flavourful gravy, are the stars of the menu. For those who enjoy good food in a serene setting, Vayaloram offers the perfect escape. The scent of freshly cooked porotta alone is enough to whet your appetite.
The beef bone marrow, prepared in Wayanad style, is the main attraction here. It’s slow-cooked on a woodfire stove until the meat is meltingly tender and infused with flavour.
Since bone marrow isn’t always readily available, Muhammad prepares it only on request. He explains that it takes two to three hours to cook it to perfection, so customers should place their orders in advance.

To eat it, hold the cooked bone upside down and gently shake to release the marrow. The soft, savoury marrow is then paired with the flaky porotta. This porotta, made on a woodfire stove, boasts a crispy exterior and soft, layered interior. The best way to enjoy it is to dip it in the marrow gravy. Regulars at Vayaloram swear by its taste and texture.
Vayaloram Porotta is open from 7 am to 10 am and again from 4 pm to 8.30 pm. In the evenings, they also serve local snacks like vettu cake, banana fritters, and vada, along with fresh tea and coffee.
Despite being cooked to order, the beef bone marrow costs only ₹50 per plate. Vayaloram has earned a loyal following in Kollam by offering flavourful food at pocket-friendly prices. A plate of beef curry is priced at ₹100, and a single porotta costs just ₹10.
