Yellow rice in coconut milk

Yellow rice cooked in creamy coconut milk is very delicious and needs no side dish to enjoy it. Check out the pretty simple recipe of yellow rice.

Ingredients

2 cups basmati rice

2 cups grated coconut

3 onions

10 pepper corns

4 cardamom pods

4 cloves

2 pieces cinnamon

Cashews

½ tsp turmeric powder

3 tsp ghee

Coconut oil

Salt as required

Preparation

Wash the basmati rice and soak for 20 minutes

Mix ½ tsp sugar in 2 sliced onions

Heat coconut oil and ghee in a pan

Fry the onions until crisp

Fry the cashews as well

Transfer some oil from it into another vessel

Fry the cinnamon, cardamom, cloves and pepper corns in the hot oil

Sauté the onions and add turmeric powder

Turn off the flame when the onions are done

Boil 4 glasses of coconut milk with curry leaves, salt and sautéed onion

Add the soaked basmati rice when the coconut milk begins to boil

Add 1 tsp lemon juice as well

Cook the rice on medium flame

Lower the flame when the coconut milk reduces and mixes with the rice

Cook for some more time on low flame

Garnish with fried onions and cashews.
