Thailand special chicken pad thai

Chicken pad thai is an iconic street food in Thailand. This stir-fried noodle dish is made using some amazing ingredients and is extremely filling. Here is how you could make chicken pad thai at home.

Ingredients
Thai rice noodles (cooked as per the instructions on the packet)
1 chicken breast
1 carrot
1 onion (cut into 1 cm thick slices)
1 scallion/green onion (cut into 1-inch pieces)
3 garlic cloves
3 eggs
1 tbsp dark soy sauce
2 tbsp light soy sauce
1 tbsp fish sauce
2 tbsp Chinese rice cooking wine
3 tbsp Thai chilli sauce/sriracha 
1 tbsp peanut butter
1 ½ tbsp sugar
1 tbsp red pepper flakes
3 tbsp oil
½ tsp salt

Preparation
Cut the chicken breast into thin slices
Mix the dark soy sauce, light soy sauce, fish sauce, Chinese rice cooking wine, chilli sauce, peanut butter, sugar and red chilli flakes in a small bowl
Heat 3 tbsp oil in a pan
Sauté finely chopped garlic on high flame for a minute
Into it add the chicken slices with some salt
Stir and cook the chicken
When the chicken slices are almost done, slide them to the side of the pan and add the carrot
Sauté for 2-3 minutes
Now add the onions with some salt; sauté for 2-3 minutes on high flame
Slide these to the side and add eggs and salt in the centre of the pan
Mix everything
Lower the flame and pour in the previously prepared sauce mix
Give everything a good mix
Finally, add in the cooked Thai rice noodles
Mix well until the noodle strings are nicely coated in the chicken and sauce mixture
Garnish with finely chopped scallions/green onions
