Spicy, tangy and sweet - this egg salad has it all!

Egg salad: a yum, spicy mixture of egg and nuts

Why not add a spicy twist to your normal boiled egg nosh? With crisp walnuts, fresh spring onions and a sweet tint of honey, 'egg salad' will be a light delight in your special health diet.

Ingredients
2 boiled eggs
2 cups of sliced lettuce
2 apples
2 tbsp chopped spring onions
3 tbsp chopped walnuts


For dressing

1/2 cup olive oil
2 tsp honey
1 1/2 apple cider vinegar
Salt, as required
Pepper powder, as required
Mustard powder, as required
1 tsp lime juice

Preparation
Keep the lettuce in a bowl with some ice cubes and water
Thinly slice the apples and brush some lime juice on them
On a plate, spread the lettuce slices
Place the apple slices on top of them
Spread spring onions and walnut over it
Mix all the ingredients for the dressing in a bowl
Sprinkle this generously over the salad
Thinly slice the boiled eggs and place them on top of it
Garnish the salad with fried noodles if needed before serving
