Black carrot Kanji

Tried this rare vegetable yet? Blend it to create great effect at your tables this summer.

Ingredients
250g black carrots / purple carrots
1 litre water
1 tsp black salt
1 tsp red chilli powder
2 dsp ground mustard
Salt to taste

Preparation
Peel carrots after washing them
Cut carrots into thin round pieces
Mix all ingredients and drop the carrot pieces into the mixture
Leave the mixture out in sunlight for 5-6 days if the temperature is low, and 2-3 days if the temperature is high
Serve chilled with carrots
