Herb crusted chicken

Let's make chicken the Italian way; the right herbs, minimal spice with the meat pink and perfectly cooked.

Ingredients
200gm chicken breast
20gm rocket salad
60gm potatoes
60gm red bell peppers
0.2gm rosemary
0.2gm parsley
0.3gm salt
0.1gm black pepper 
White wine
0.5gm extra virgin olive oil
0.5gm Parmesan cheese
20gm bread crumbs

Preparation
Marinate the chicken with olive oil, salt, pepper and rosemary
Cut bell peppers and roast with white wine at 200°C; peel and blend
Cut potatoes into cubes, blanche and roast with rosemary and garlic
Prepare a herb crust with rosemary, parsley and Parmesan cheese
Roast the chicken breast, sprinkle the herb crust and assemble on the plate with potatoes, roasted peppers coulis and salad
