At the fag end of jackfruit season, savour what you can of this wonderful fruit and make this zesty stir fry. A nutritional fruit found in abundance in Kerala, it's great for making a variety of curries.

4 cups raw jackfruit flesh, chopped
1 cup grated coconut
½ tsp jeera
3 green chillies
1 tsp turmeric
1 tbsp oil
1 tsp mustard seeds
3 dry red chillies
2 sprigs curry leaves
Salt, as required

In a steamer, cook the jackfruit pieces until they turn tender
Using a mortar and pestle, or mixer, crush the jackfruit
Grind the coconut, jeera, turmeric and green chillies to a coarse paste
In a pan, heat oil, and add the ingredients for seasoning€”mustard seeds, curry leaves and dry red chillies
To this, add the ground coconut and heat till the raw smell goes away. Then, add the crushed jackfruit, salt and mix well
