rbi, a variety of tuber colocasia, is the best thing to go for if you are planning to fast. In most parts of Kerala, arbi– known as Chembu, is a staple food. You might have heard of mashed arbi, arbi curry and arbi leaf recipes. Well, this one is the coolest in the regime. The crispy cutlet is easy to make and has a unique taste when comparing with regular veggie cutlets. It works best when paired with mint chutney.
Ingredients
15 pieces of arbi
1/2 cup rice flour
2 tsp chili powder
½ tsp turmeric powder
1 tsp coriander powder
1 tsp garam masala
½ tsp cumin powder
1 tbsp oil
Salt as needed
2 tsp coriander leaves
Preparation
Wash arbi and cook them until it turns soft.
Once cooked, run them under cold water, peel and chop them.
Mash the arbi pieces using hands.
Add everything except 2 tsp rice flour, chili powder, turmeric powder, coriander powder, garam masala and salt to the mashed arbi and mix well.
Pinch out small amounts of the mixture.
Roll them into small balls and flatten them using your palms.
Now roll them in the remaining rice flour.
Heat oil in a pan and fry these cutlets.
Toss them till both the sides turn brown.
Garnish with coriander leaves and serve.
