Sabudana khichdi- A quick and tempting 'Vrat' recipe

Sabudana khichdi

Be it Shivaratri, Dussehra or Ekadashi, sabudana dishes top our list of fasting foods. Sabudana khichdi is an easy and yummy Maharashtrian snack usually made while taking 'vrat'. Made of soaked tapioca pearls, the dish gets its unique flavor from the ground peanuts added it. They are best served with curd or pickles.

Ingredients
1 cup sago or sabudana
1/4 cup roasted peanuts, deskinned
3 tbsp ghee
1 potato, cut into small pieces
4 green chilies, chopped
1/2 tsp cumin seeds
1 tsp lemon juice
2 tsp scraped coconut
1 tsp chopped coriander leaves
1 sprig curry leaves

Preparation
Wash sabudana or tapioca pearls and soak them for 4 hours
Coarsely grind the roasted peanuts and set aside
Add the ground peanuts and grated coconut with the soaked tapioca pearls
Mix it well and set aside
Cook the potato pieces and set asideHeat ghee in a pan
Add curry leaves, green chilies and cumin seeds
When the cumin seeds start to crack, add the potato pieces
Saute for a minute
Now add the sabudana mixture to the pan and stir well
Saute until the pearls start to become translucent
Take off from the stove and drizzle lemon juice over it
Garnish with coriander leaves and serve with curd
