Aval kheer

Aval or flattened rice are de-husked rice which is beaten into thin flakes. A storehouse of vitamins, minerals, and fibre, flattened rice is often called a wholesome food. It is easy on the stomach and aides digestion as well. Here is a simple recipe of aval kheer which also has the goodness of saffron in it.

Ingredients
25 gms flattened rice
15 ml ghee
5 gms cashews
5 gms raisins
250 ml milk
2 tsp cardamom powder
30 ml condensed milk
50 gms sugar
2 gms saffron

Preparation
Wash the flattened rice well and drain. This would make it soft
Heat ghee in a pan and roast cashews and raisins
Keep it aside
In another pan boil milk in medium flame
When the milk begins to boil, lower the flame, and add the soaked flattened rice
Cook for 15 minutes by stirring in intervals
Into it add cardamom powder, condensed milk and sugar
Stir until the sugar dissolves
Cook for 3 more minutes, and when the kheer begins to thicken take it off flame
Transfer the kheer into a big bowl and garnish with roasted cashews and raisins, and saffron
Aval kheer can be served hot or cold.
