Nutritious yellow lentil-spinach curry

Try out this simple recipe of yellow lentils and spinach curry which is loaded with essential nutrients, vitamins and fibre. The dish goes well with chappathi, rice, or roti.

Ingredients
2 tbsp yellow lentils
50 gms spinach (chopped)
Half of an onion (chopped)
Half of a tomato (chopped)
A small piece of ginger (chopped)
1 clove garlic (chopped)
Salt as required
A pinch of turmeric powder
1 tbsp butter
A pinch of cumin
A pinch of chilli powder
A pinch of garam masala powder

Preparation
Wash the yellow lentils and soak in water for at least an hour
In a pressure cooker add the soaked yellow lentils, spinach, onions, tomatoes, ginger, garlic, and salt, and turmeric powder
Cook for 5-7 minutes 
Allow the yellow lentils-spinach mixture to cool down
Heat butter in a pan and add the cumin seeds
When the cumins pop, add the chilli powder, and garam masala
Roast well and add it into the yellow lentils-spinach mixture
Mix well and serve hot.
