Chicken pesto rice noodles

Think sevai and what comes first to mind are delicious payasam or spicy upma. Our DoubleHorse Homechef winner for the month Aisha Sameeha looked beyond these two tasty regulars and created chicken pesto rice noodles. Don't be fooled by the fancy name, the mouthwatering dish is super easy to make and will be eady in less than half an hour!

Aisha is a homemaker from Nilambur, Malappuram whose passions revolve around food and cooking. Her experiment with sevai resulted in healthy, low-calorie dish. Give it try and enjoy the goodness.

Ingredients
For pesto sauce:
1 cup fresh basil leaves
1 cup fresh parsley leaves
1 cup parmesan cheese
2 tbsp olive oil
6 cloves of garlic
1 tbsp pepper 
½ cup cashew nuts and walnuts
Salt as needed
For the noodles:
250 gm chicken
1 tsp salt
1 tsp pepper
1 packet Double Horse rice sevai/rice noodles
Water as needed
1 tbsp olive oil

Preparation
In a mixer, add basil leaves and parsley leaves 
Add parmesan cheese, pepper, and salt to this mixture
Add garlic, walnut, and cashew nuts 
Squeeze the juice of half lemon into this
Add some paprika and blend
Pour olive oil and blend again
Keep the pesto sauce aside
Now, cut the chicken into cubes
Marinate the chicken with pepper and salt and cook well
In a bowl, add water, salt and a teaspoon of olive oil
To this, add the Double Horse rice sevai and cook 
Heat olive oil in a pan
Add the cooked chicken cubes into it
Also add the prepared pesto sauce and the cooked rice sevai into this mixture
Sauté well.
Chicken pesto rice noodles is ready to be relished.
