Tomato egg rice is an amazing lunch idea made with basic things at home.
Ingredients
2 cups rice
3 eggs
3 big tomatoes
1/2 of a big sized onion
4 slit green chillies
1 piece ginger crushed
10 cloves of garlic crushed
1/4 tbsp turmeric powder
Chilli powder as per taste
Coconut oil
Salt to taste
2 sprigs of curry leaves
Preparation
To a hot pan add coconut oil, crushed ginger and garlic, onion, green chillies and curry leaves and sauté till the raw smell goes off.
To this add turmeric powder and sauté on low flame and after that add chilli powder.
Add chopped tomatoes and salt and cook it on medium flame by covering the pan with a lid.
Stir in between.
When the tomatoes are cooked well and becomes a paste, add eggs into it and cook well by stirring continuously.
Add boiled rice to the pan and mix well on high flame. There you go!
