Special chicken baked in tender coconut

Chicken baked over hot charcoal may not be the easiest dish to prepare. However, it indeed is one of the most delicious chicken dishes. Check out this special recipe of chicken baked in tender coconut. The spicy marinade of bird eye chilli, ginger-garlic and yogurt packs it with flavours and makes the chicken pieces tender as well. The marinated chicken pieces are then stuffed inside very tender coconuts and baked on coal. The spiciness from the special marinade and the smoky flavour makes this perfectly cooked chicken finger-licking good.

Ingredients
5 tender coconuts
500 gms boneless chicken (cut into small pieces)
100 gms red eye chilli
100 gms curry leaves
50 gms ginger-garlic paste
4 lemons
250 ml yogurt
Salt as required
Black pepper powder as required

Preparation
Add salt, pepper, ginger-garlic paste and lemon juice into the chicken pieces and mix well.
Prepare the special marinade by grinding bird eye chillies, curry leaves and yogurt into a fine paste.
Marinate the chicken pieces with this marinade and set it aside.
To bake
Dig a pit and line it with flaming charcoal.
Stuff the marinated chicken pieces into the cleaned tender coconuts. Do not pack the tender coconuts tightly, as the chicken needs some breathing space to cook nicely.
Cover the stuffed tender coconuts using aluminium foil and place on the hot coals.
Spread burning charcoal or coconut husks over the stuffed tender coconuts.
Bake the chicken for at least 30 - 45 minutes.
Take out the hot tender coconuts and split it open using a knife.
Enjoy hot and spicy baked chicken.
