Whole chicken roast in clay

Food vlogger Firoz Chuttipara has millions of followers who love his unique methods of cooking. His videos are mostly shot in the beautiful bucolic villages of Palakkad and people admire Firoz's simple presentation style.

In the latest episode of his vlog, Firoz stuns his followers by preparing a unique and unbelievably delicious roast chicken. The whole chicken is wrapped in a plantain leaf and coated in fresh clay before roasting the packet over fire. Check out how Firoz prepares this mouth-watering dish which takes at least one and half hours to cook.

Ingredients
Whole chicken
Chilli powder
Coriander powder
Pepper powder
Turmeric powder
Ginger-garlic paste
Lemon juice
Salt as required
Coconut oil
Coriander leaves

Preparation
Score the skinned, cleaned whole chicken and set it aside
To prepare the marinade, mix the chilli powder, coriander powder, pepper powder, turmeric powder, ginger garlic paste, lemon juice, and salt as required
Add some coconut oil and mix everything well into a smooth masala paste
Marinate the chicken with this flavoursome masala mix. Rub the marinade inside the chicken as well, for maximum flavour
Sprinkle chopped coriander leaves generously over the marinated chicken. Stuff coriander leaves inside the chicken
Wrap the marinated chicken in two layers of plantain leaves and then in aluminium foil
Mix mud into smooth clay by pouring water as required. Coat the chicken packet with this clay in 1 inch thickness (If this clay coating is too thick, then the chicken won't get cooked)
Burn some firewood and place this clay coated chicken packet over the fire
Cook the chicken by flipping the packet until the clay coating is dried well on all sides
The chicken would be cooked perfectly in about one and half hours
Break open the hardened clay coating to take out the juicy chicken and serve.
