Ingredients
For the filling:
1 tbsp oil
1 tsp asafetida powder
1 tsp cumin
1 tbsp ginger
1 tbsp green chillies
¼ cup green peas
5-6 potatoes (boiled and mashed)
Salt as required
1 tbsp chilli powder
1 tbsp coriander powder
1 tbsp dry mango powder (amchur powder)
1 tbsp fennel powder
1 tsp kasuri methi (dried fenugreek seeds)
1 tsp garam masala
1 tbsp coriander leaves
For the samosa dough:
2 cups all-purpose flour
1 tsp ajwain
Water as required
3 tbsp oil
Salt as required
For the batter:
½ cup all-purpose flour
Salt as required
Water as required

Preparation
Mix the all purpose flour, ajwain, oil, salt and water into soft dough
Keep it aside for at least half an hour
Heat oil in a pan
Sauté all the ingredients with the powders to prepare the filling
Prepare the batter by mixing the all purpose flour with salt and water
This batter shouldn€™t be too thick
After half an hour, separate the dough into two parts
Take one part and mix well into a ball
Now roll it not too thinly
Place the filling on the dough sheet
Roll the dough with the filling inside
Cut the roll in half
Twist them in the shape of a wheel
Dip the pinwheel samosas in the batter
Fry in hot oil
Serve them hot with coriander chutney or tomato ketchup.
