Banana stem is a rich source of fibre and is a very healthy food. Here is a Konkani style recipe of banana stem with coconut.
2 cups finely chopped Gabbo/ banana stem
1 tsp urad dal
1 tsp mustard seeds
1 spring curry leaves
1/4 tsp Hing/asafoetida
1/2 cup grated coconut
4 green chillies slit
2 tsp oil
Salt to taste
In a pan, heat oil.
Add urad dal, when it turns brown add mustard seeds and curry leaves.
When the mustard seeds splutter, add the chopped Gabbo or banana stem along with salt and green chillies. Stir well.
Add 1/4 cup of water and cook for 8 to 10 minutes on medium fire.
Add grated coconut and Hing and serve.
Goes well with white rice.
