Sprouted fenugreek stir fry

Fenugreek is known for its incredible nutritional qualities. This sprouted fenugreek stir fry isn’t bitter at all and can be enjoyed as a side dish with rice and chapathi. Besides, the stir fry could be enjoyed as a filling salad as well. Here is the recipe of the sprouted fenugreek stir fry.

Ingredients
1 glass fenugreek (soaked in water to make it sprout)
7 dried chillies
8 shallots
2 cloves garlic
1 tsp cumin
1 tsp mustard seeds
Salt as required
Turmeric powder
Raisins as required
12 dates
Half grated coconut
3 green chillies
1 tomato
Curry leaves as required
Half lemon

Preparation
Heat coconut oil in a pan and splutter mustard and cumin seeds
Sauté crushed shallots, dried chillies, garlic and curry leaves
Add turmeric powder and salt as required
Now add the chopped tomato
Cook until the tomato is nice and mushy
Into it add the raisins and finely chopped dates
Mix well and sauté for a while
Now pour 1 glass water
Add the sprouted fenugreek when the water begins to boil and the dish thickens up
Cook on low flame
Add the grated coconut when the water is reduced and the sprouted fenugreek are nicely cooked
Mix well for at least two minutes
Turn off the flame and add the lemon juice
Enjoy the sprouted fenugreek stir fry.
