Dates-lime pickle

Dates and fried lime pickle has the perfect balance of sweet, sour, salt and spiciness. This pickle tastes amazing with biryani and other Arabian rice dishes. Check out the recipe.

Ingredients
14 limes
20 dates (pits removed)
2 tbsp dried chilli powder
1 tsp sugar
½ tsp asafetida
¼ tbsp fenugreek powder
2 tsp mustard seeds
4 red chillies
1 small piece of ginger (finely chopped)
3 green chillies (finely chopped)
8 garlic cloves
Curry leaves as required
Salt as required
Sesame oil as required

Preparation
Heat 1 tbsp sesame oil in a pan
Add the limes and fry lightly for 10 minutes
After the limes have cooled down, wipe off the excess oil and cut them into small wedges
Mix salt and sugar with these lime wedges
Keep the lime wedges aside in a dry vessel for at least 2 hours
Heat some more oil in a pan
Splutter the mustard seeds and then sauté red chillies, ginger and garlic
Add the sliced dates 
Sauté for some time
Into it add the dried chilli powder, asafetida and fenugreek powder
Sauté until the raw smell of the powders is gone
Pour ½ cup water, some vinegar and salt 
Mix well and boil for some more time
Take the pickle off the flame and allow it to cool down
Add the fried lime wedges when the pickle is warm
Give everything a good mix
Store the pickle in dry glass jars.
