Although rabbit meat is very popular in Kerala, lack of availability is a big challenge. This is the best white meat available in the market today. However, many people still do not know the importance of rabbit meat. The amount of fast digesting protein is higher in rabbit meat. And the fat content is much lower than other meats too. It's very easy to prepare Rabbit Chinthamani. Let's see how we can prepare this simple Rabbit Chinthamani recipe.

Ingredients
1 kg rabbit meat
400 gms shallots
4 tsp chilli powder
½ tsp turmeric powder
5 green chillies
3 tomatoes
150 gms coconut oil
1 tbsp ginger-garlic paste
2 tsp salt
A bunch of curry leaves

Preparation
In a pan, mix crushed shallots, ginger-garlic paste, green chilly, turmeric, chilly powder, coconut oil, curry leaves, salt and rinsed rabbit meat together and keep it aside for ten minutes
Then cook the meat for 10 minutes on high flame.
Then reduce the heat and cook for another 10 minutes
Add tomatoes and cook for another 10 minutes
Delicious Rabbit Chinthamani is now ready to be served.
