Dahi Bhindi

Dahi Bhindi is a super tasty curry and a perfect match for rice. The delicious Dahi Bhindi prepared sans coconut is a good choice for lunch especially during summer.

Ingredients
Okra (Bhindi) - 250 gm
Curd (dahi) - 3/4 cup
Onion-1
Ginger-garlic paste - 2 tablespoon
Grated chillies - 3
Curry leaves
Mustard - half a teaspoon
Cumin - half a teaspoon
Fenugreek - two pinches
Asafoetida powder - two pinches
Chilli powder - half a teaspoon
Kashmiri chilli powder - a teaspoon
Coriander powder - two tablespoon
Kasuri Methi - half a teaspoon
Garam masala - half a teaspoon
Gram flour - a tablespoon
Oil - three tablespoons
Salt and water
Coriander leaves

Preparation
Wash and chop okra into small pieces and fry in a tablespoon of oil for five minutes
Heat oil in a pan, fry mustard and add some grated chilli, cumin and fenugreek
Add chopped onion, green chillies and curry leaves and fry till it turns brown
Put the ginger and garlic paste. Add kasuri methi and fry again till it turns green
Add gram flour and roast on low heat for 30 seconds
Then add all the masala powders and heat well
Add asafoetida powder and mix well
Add curd, enough salt and water, cover and boil it for 5 minutes
Add chopped okra and cook for two to three minutes
Serve with garam masala powder and coriander leaves and your dahi bhindi is ready.
