Special scrambled egg fry

Scrambled egg is a tasty and filling dish that you can try for breakfast. How about making it differently? Here is how to make special scrambled egg fry.

3 eggs
1 onion
1 tomato
1 tbsp chopped ginger
1 tbsp chopped garlic
1 green chilli
2 tbsp coconut oil
2 tbsp chopped coriander leaves
Curry leaves
½ tsp turmeric powder
½ tbsp chilli powder
1 tsp garam masala
¼ cup water
Salt as required

Heat a thick bottomed pan on medium flame
Heat 2 tbsp coconut oil in it
Add onion, ginger, garlic, green chilli and curry leaves
Sauté for at least 7-8 minutes
Lower the flame when the onions are nicely caramelised
Now add turmeric powder, chilli powder and garam masala
Sauté until the raw smell of the powders are gone
Now add the tomato and some salt
Sauté until the tomato is nice and mushy
Into it pour ¼ cup water
Allow it to boil well
Add the eggs when the water reduces nicely
Cook for 5 minutes on low flame with the lid on
After 5 minutes, sprinkle some salt and chopped coriander leaves too
Now scramble and cook the eggs for 3-4 minutes
Add some more coriander leaves if required
Enjoy the scrambled eggs with toast.
