Palak dal curry

Palak dal curry is nutritious and tastes amazing with rice or chapathi. Here is the recipe.

1 cup toor dal
2 cups water
Salt as required
½ tsp turmeric powder
2 tbsp coconut oil
½ tsp mustard seeds
½ tsp cumin seeds
1 tsp finely chopped ginger
1 tsp finely chopped garlic
3 green chillies
2 onions (cut into small pieces)
½ tsp chilli powder
1 small tomato
150 gms/palm-full of palak (green spinach)
2 tsp ghee

Pressure cook the toor dal with some turmeric powder and salt on medium flame until 3 whistles
Heat coconut oil in a pan
Splutter mustard seeds and cumin seeds
Sauté ginger, garlic, green chillies and onions
Add chilli powder and stir for a minute
Now add tomatoes and sauté well
Add the palak (green spinach)
Mix and stir for 3 – 4 minutes
Into it add the ghee, cooked dal and water as required
Mix well
Tasty palak dal curry is ready.
