Kerala’s own fish molee

Quite a Kerala style fish stew, the fish molee gets its distinctive taste from the coconut milk with which it is flavoured. Here’s a recipe to get up a dish of the very delicious fish delicacy.

Ingredients
2 tablespoon coconut oil
2 sticks of cinnamon
5 cloves
3 cardamoms
1 teaspoon chopped garlic
1 teaspoon chopped ginger
12-14 green chillies
4 big onions (sliced into ¼ size rings)
Curry leaves
Salt
¼ teaspoon turmeric powder
250 gm fish
1 tomato
2 cups coconut milk (second extract)
1 cup coconut milk (first extract)

Preparation
Over a medium flame, heat oil in a frying pan
Add in the spices - cinnamon, cardamom and cloves (crushed) along with ginger, garlic and green chillies and sauté for a minute
Add curry leaves, salt and chopped onions and sauté lightly
Mix in the turmeric powder and stir well
Cook the entire mix in the second extract of coconut milk
Once it starts boiling, add in the fish, piece by piece
Add salt as per requirement
Put in the sliced tomato and continue with the cooking till the gravy thickens
The dish should be like a stew by now
Now pour in the first extract of coconut milk
Lower the flame and turn it off once the gravy reaches boiling point
Garnish with curry leaves and serve.
