Try these two beetroot chutneys for lunch

Two beetroot chutney recipes

Loaded with essential nutrients and vitamins, beetroots are excellent for the health of liver. Check out the recipes of beetroot chutneys that can be prepared using simple ingredients. The first one could be enjoyed with biryani while the Andhra style chutney is spicy.

Special beetroot chutney
Ingredients
1 beetroot
1 cup grated coconut
6 green chillies
Shallots
Ginger
Curry leaves
4 -5 dried chillies
2 tbsp vinegar

Preparation
Cut the washed and peeled beetroot into small pieces
Take the beetroot pieces, shallots, ginger, green chillies and salt in a mixer jar
Grind well
Into it add grated coconut and vinegar
Grind until the chutney has the right consistency
Serve with biryani or dosa.

Andhra style chutney
Ingredients
1 beetroot
1 cup grated coconut
2 green chillies
6 -8 red chillies
Garlic
Urad dal
Curry leaves
1 onion
2 tbsp tamarind

Preparation
Heat oil in a pan and splutter urad dal
Sauté red chillies, garlic and onion
Now add ginger, green chillies and curry leaves
Sauté well
Into it add the beetroot pieces
Sauté for 5 -6 minutes until the beetroot is nicely cooked
Add the tamarind and salt as required
Mix well and take it off the stove
After this mixture has cooled down, grind it in a mixer jar by adding grated coconut
Heat oil and splutter mustard seeds
Sauté red chillies and curry leaves
Add this tempering into the chutney
Mix well
Enjoy the Andhra style beetroot chutney.
