The dates and beetroot pickle is spicy, sour and a bit sweet. Here is the recipe of the delicious pickle that could be enjoyed with rice or biryani.

Ingredients
2 grated beetroots
25 dates
2 tbsp chopped ginger
2 garlic bulbs
4 green chillies
3 tbsp chilli powder
½ tbps asafoetida powder
2 tbsp salt
4 tbsp coconut oil/sesame oil
½ cup vinegar
¾ tbsp mustard seeds
½ tsp fenugreek seeds

Preparation
Heat coconut oil and splutter mustard and fenugreek seeds
Sauté ginger, garlic and green chillies
Add chilli powder
Sauté until the raw smell is gone
Now add the dates after removing the pits
Cook until the dates turn softer
Into it add the grated beetroot
Add salt and asafoetida powder
Cook for some time
Finally, add the vinegar
Give everything a good mix
Store in jars after the pickle cools down.
