Check out the pretty simple recipe of tasty tomato rice that could be packed for lunch to schools and office.

Ingredients
2 cups rice
4 medium-sized shallots (chopped into thin slices)
4 medium-sized tomatoes
1 piece ginger
4 garlic cloves
4-8 cloves
2 green chillies
¼ tsp chilli powder
Mint leaves
Coriander leaves
½ tsp fennel seeds
2 bay leaves
¼ tsp garam masala
4 cups water
3 tsp coconut oil or sunflower oil
2 tsp ghee

Preparation
Crush ginger, garlic and green chillies
Make tomato puree
Meanwhile, wash and drain the rice
Heat ghee and oil in a pan
Add fennel seeds and bay leaves
Now add the shallots and salt
Sauté until the shallots turn light brown in colour
Add the crushed ginger, garlic and green chillies
Sauté for 2 minutes
Into it add the tomato puree, chilli powder and turmeric powder
Cook well
Now add the rice
Pour hot water
Add mint leaves and garam masala too
Cook on high flame until the water boils
Then lower the flame and allow the rice to cook well
Finally, add chopped coriander leaves before turning off the flame
Close the lid and keep aside for 10 minutes before serving.
