Simple cucumber moru curry

Moru curry or spiced butter milk is an indispensable dish in the Kerala cuisine. Here is how to make simple moru curry by adding cucumbers.

Ingredients

2 cups cubed cucumbers
4 green chilies
Curry leaves
½ tsp salt
¼ tsp turmeric powder
1 cup water
¼ tsp cumin powder
1 cup yogurt
1 tbsp coconut oil
¼ tsp mustard seeds
1/8 tsp fenugreek seeds
2 -3 red chilies
Curry leaves
1/8 tsp asafoetida powder
1/8 tsp chili powder

Preparation

Add the cucumber, curry leaves, green chilies, turmeric powder, salt and water to a pressure cooker
Cook on high flame until 3 whistles
Open the lid only after the steam is gone
Add cumin powder
Allow it to boil for a few minutes
Beat the yogurt using a fork before adding into the cooker
Mix well
Meanwhile, heat coconut oil in another pan
Splutter mustard seeds
Add fenugreek seeds
Roast until the fenugreek seeds change colour
Add red chilies and curry leaves
Add asafoetida powder and chili powder
Mix well
Add this tempering into the spiced buttermilk
Give everything a good mix
Close the lid and keep aside for at least 5 – 10 minutes
Enjoy the spiced butter milk with rice and curries.
