Eranadan chemmeen charu

Looking for some variety on your breakfast table? Swap your boring prawns masala for this rich creamy curry with a dash of spiciness.

Ingredients
300 gm tiger prawns
10gm ginger
10gm garlic
1 onion, sliced
1 tomato, sliced
Salt to taste
1/3 tbsp turmeric powder
50ml coconut milk
Few shallots, crushed
3 red chillies, crushed
Water as required
20ml coconut oil
10gm coriander leaves, chopped

Preparation
Heat coconut oil in a pan
Add ginger,garlic and onion
Cook until the onions turn brown
Add salt, turmeric powder and tomato
Cook until the tomato becomes mushy
Add in the prawns
Add water as required
Cook for 5 minutes in medium heat
Add the coconut milk
Garnish it with crushed red chillies, garlic, shallots and chopped coriander leaves
Serve with appam, Kerala parotta or white rice
