Don't throw away the plantain stems, try out this delicious vazhapindi pickle

Plantain stems are great source of healthy fibres. Here is how to prepare a tasty and spicy pickle using it.

Ingredients
Plantain stem (cut into small pieces)
¾ tbsp chilli powder
1 tbsp Kashmiri chilli powder
½ tsp asafoetida powder
¼ tsp fenugreek powder
½ tsp mustard seeds
1 ½ tbsp ginger and garlic slices
¼ tsp turmeric powder
4 tbsp sesame oil
3 tbsp vinegar
Curry leaves
Salt as required

Preparation
Soak the plantain stem pieces in some water so that it won’t lose colour
Heat sesame oil in a pan
Splutter mustard seeds
Sauté the ginger and garlic
Now add the soaked plantain stem and salt as required
Sauté well until the water is reduced completely
Into it add chili powder, Kashmiri chili powder, turmeric powder and curry leaves on low flame
Close the lid and cook for 2 minutes
Turn off the flame when the oil starts to separate
Now add the fenugreek powder
Keep the pickle aside until it cools down a bit
Add vinegar when the pickle is warm
Mix well
After it has cooled down completely, store the pickle in air tight jars
Enjoy the delicious plantain stem pickle with rice or gruel.
