Foxtail millets are storehouse of vitamin B 12 that is essential for maintaining a healthy heart, smooth functioning of the nervous system and for the healthy growth of hair and skin.

Including foxtail millet in your regular diet would help in controlling the glycemic index and lower the insulin, cholesterol and fasting glucose in type 2 diabetic patients. Here is how to prepare foxtail millet idli.

Ingredients
1 cup foxtail millet
½ cup urad dal
½ cup boiled millet
Salt as required
1 tsp fenugreek

Preparation
Wash the foxtail millet
The outer coating on the millet is nutrient rich; so, do not press too hard while washing
Soak the washed millet for 6 – 8 hours
Meanwhile, soak the washed urad dal with 1 tsp fenugreek seeds for 6 – 8 hours
Instead of adding regular rice, use boiled millet to make softer idlis
Grind the soaked foxtail millet, urad dal and boiled millet
Keep the batter aside for 6 – 10 hours for it to rise
Add salt before making idlis
Enjoy the foxtail millet idli with sambar and coconut chutney.
