Forget pickled and brined bilimbi; refreshing mojitos are the trend now

Bilimbi fruit is often enjoyed in Kerala as spicy pickle with piping hot rice. Brined bilimbi too has many takers. However, not many know that it is an excellent ingredient to make delicious and refreshing mojitos. The drink can be a refreshing addition to your favourite summer coolers. Here is the recipe of bilimbi mojito.
Ingredients
7 bilimbi
1 inch piece of ginger
2 tbsp lemon juice
1.5 cups water
1 bottle sparkling water
Sugar as required
A pinch of salt
2 split green chillies
Preparation
Blend bilimbi fruits, ginger, sugar and salt with one cup water in a mixer jar
Add lemon juice and half cup water
Blend again
Strain the juice
Add the split green chillies
Mix well
Fill half of a serving glass with juice
Now add the sparkling water
Tasty bilimbi mojito is ready.
