Hyderabadi chicken fry: A symphony of flavours

Chicken can be fried in numerous ways and our traditional versions are generally rich with a variety of spicy flavours. Hyderabadi chicken fry, which is a must-have item in the region for special functions like weddings, is also popular at parties as starters.

While its crispy and spicy outside, the dish is quite juicy within and it can be a perfect side dish with rice, chapathi, porotta and the like. Check out the recipe.

Ingredients
500 gms chicken
1 tsp ginger – garlic paste
½ tsp Kashmiri chili powder
½ tsp turmeric powder
½ tsp garam masala
½ tsp fennel powder
½ tsp cumin powder
½ tsp coriander powder
½ tsp pepper powder
Salt as required
100 ml mustard oil
1 tsp chopped curry leaves
3 tbsp yoghurt
20 gms fried onion
10 gms chopped coriander leaves

Preparation
Marinate the chicken with the masala powder
Keep aside for at least an hour
Heat mustard oil in a pan
Fry on medium flame for 10 minutes
Add the chopped curry leaves, yoghurt, fried onion and coriander leaves
Mix well and serve.
