Vegetable stew in rich coconut milk: An eternal favourite

A vegetarian curry that takes the taste of chapathi, roti or any other breads to a whole new ‘delicious’ level, vegetable stew is a classic dish that many Malayalis love. Prepared with creamy coconut milk and spices, it has an earthy taste and is extremely nutritious. Here’s the easy recipe:

Ingredients
1 onion
2 garlic cloves (crushed)
Small piece ginger (crushed)
Curry leaves as required
Green chillies as per taste
2 potatoes
1 carrot
1 bell pepper
Palm full of green peas
Coconut milk as required
Coriander leaves as required

Preparation
Save the first extract of coconut milk to be used later
Heat oil and sauté onion, garlic, ginger, green chillies, and curry leaves
Add the second extract of coconut milk
Now add the potatoes, carrot, bell pepper and green peas
Cook the vegetables in the second extract of coconut milk
Add the first extract of coconut milk and mix well
Garnish with chopped coriander leaves
