Maize flour idiyappam: A variety flavour of the popular breakfast dish

Idiyappam is a much-loved breakfast item that is easy to prepare and tastes amazing with vegetarian and non-veg curries. However, many complain that mixing the dough to the right consistency is quite a task.

Even though idiyappam is usually prepared using rice flour, recipes of wheat flour idiyappam too are available online. But, the current trend is the soft and tasty idiyappam made with maize flour. Here is how to make it at home.

Ingredients
1 cup maize flour
1.5 cups hot water
1 tsp oil
Coconut as required
Salt as required

Preparation
Toast the maize flour in a hot pan
After it has cooled down, add salt and hot water
Mix into a sticky idiyappam dough
Add some oil too in order to make it soft
Grease the idiyappam vessel with some oil
Fill the idiyappam mold with the dough
Press the dough into the greased vessel
Sprinkle some grated coconut on top
Enjoy hot idiyappam with flavoursome curries or with sweetened coconut milk.
