Tasty and easy to make, this sweet potato boli is a filling breakfast item

Sweet potatoes are loaded with energy and other essential nutrients. However, not many enjoy eating just plain boiled sweet potatoes. They contain beta-carotene and vitamins A and E. Here is how to make sweet potato boli or tasty flatbreads.

For the dough
200 gms wheat flour
2 tsp ghee
½ tsp salt
½ tsp turmeric powder
Water as required
For the filling
1 medium-sized sweet potato
200 gms jaggery
¼ tsp salt
2 cardamom pods
½ glass water

Mix the wheat flour, ghee, salt and turmeric powder in a bowl
Add enough water and mix into a soft dough
Wash the sweet potato and cut into four or five cubes
Pressure cook them with some water until 3 – 4 whistles
After the sweet potato cools down, remove the skin and mash them
Heat a thick-bottomed pan
Add the mashed sweet potato and jaggery
Mix well
Add cardamom powder and a pinch of salt when the mixture is nice and dry
Turn off the flame and allow it to cool down
Make small balls from the dough and roll them into flatbreads
Place the sweet potato filling in the centre and roll again
Rub some ghee on a hot pan
Cook the boli until both sides are nicely done
Delicious sweet potato boli could be enjoyed as a filling breakfast dish
