Ariyunda: Kerala’s favourite traditional dessert with simple ingredients

Ariyunda, a jaggery-based rice ball, is one of Kerala’s favourite sweet snacks. The healthy and delicious recipe can be prepared at home with just four ingredients and that too in a flash! Let’s see how:

Ingredients
2 cups matta rice
¾ cup cashew nuts
1 ½ cups jaggery
2 cups grated coconut

Preparation
Wash the rice and dry roast till it turns brown
Blend it into powder
No need to blend the rice extra fine, but blend it into crunch-bites form
Dry roast the cashew nuts and blend them into powder as well
Put jaggery and grated coconut into a mixer and grind it once
Make sure that this is not made into a paste form
Shift this mix into a bowl and add the powdered rice and cashew into it
Knead the mix for some time, and start making the balls
The delicious ariyunda is ready
Store it in an air-tight container for longer use
