A special recipe to prepare crispy fish fry at home

Often, when you try to make fried fish at home inspired by restaurant-style fish dishes, they don't crackle as much. But don’t worry, you can follow a few easy steps to get it done. The main point to remember while planning to prepare the crispy dish is that there should be minimum water content on the fish. You can even remove the water with a paper towel so that the fish is as dry as possible.

Another crucial factor is the flame. Set the stove to medium heat so that the oil does not become too hot while frying. Moreover, the fish pieces have to be placed symmetrically in the oil. Each side has to be fried for an equal time – preferably three to four minutes or till the fish acquires a golden-brown colour.

Ingredients
½ kg fish
Adequate oil
For first marination:
1 teaspoon of ginger-garlic paste
Adequate lemon juice
Salt to taste
¼ teaspoon yellow turmeric powder
¾ teaspoon garam masala
½ teaspoon coriander powder (optional)
½ teaspoon red chilly powder
For second marination:
1 ½ tablespoons of rice flour
Salt to taste
½ teaspoon red chilly powder
1 sprig of curry leaves, finely chopped

Preparation
For the first marination, mix the required ingredients on a plate thoroughly
Clean the fish pieces and dry them properly
Apply the masala for the first marination on the fish pieces and keep them aside
Mix the ingredients for the second marination
Dip both sides of the fish pieces in the second mixture
Keep aside the fish pieces for 10-15 minutes
After marinating the fish, heat a pan with oil
Fry both sides of the fish equally on medium heat
The special crispy fish fry is ready to be relished
