If you are wondering how to make your Christmas desserts special this time, why not try a cake with 'palayamkodan' banana as the base? The banana aroma of the cake is sure to impress your health-conscious guests too! Here's the recipe:

Ingredients
6 palayankodan plantains
1½ cups maida
½ cup sugar
2 tbsp cocoa powder
1 teaspoon baking powder
1 teaspoon baking soda
¼ teaspoon salt
½ cup sunflower oil
½ cup milk
1 tablespoon vinegar
½ cup warm water
2 tbsp chocolate chips

Preparation
Sift maida along with salt, baking powder and baking soda
Blend together the plantain, oil and sugar in a mixie
Add the plantain mix with the maida and blend well
Mix in the milk, vinegar and water
Bake after adding the chocolate chips

Cooking tips:
You can bake the batter on a gas stove also
Heat a dosa tawa and place a thick-bottomed non-stick pan on it
Heat it thus for 10 minutes
Lace the dish with butter paper, oil the sides, pour in the batter, cover the dish and cook for 30 minutes
Stick a knife into the cake and if it comes out unstuck, the cake is ready
Allow it to cool
Piece it up and serve
