This millet curd rice is the perfect summer dish for health nuts

Millets are storehouses of healthy fibres. It contains more protein than rice and wheat. Protein is essential for maintaining the overall health and well-being of the body. Including millet in your regular diet could help overcome protein deficiency.

This delicious foxtail millet (thina in Malayalam) curd rice is an excellent way to include millets in your diet. It would take under ten minutes to prepare this probiotic-rich dish if you have leftover cooked millet. Check out the recipe here.

Cooked millet
Oil as required
Mustard seeds
Cumin seeds
Dried chillies
Curry leaves

Take the millet in a mixing bowl
If you are using freshly cooked millet, then allow it to cool down first
Mash the millet using the back of a spoon or a potato masher
Add curd
(Do not add curd into hot millet as it would destroy the good bacteria)
Mix well
Add water if required
Meanwhile, heat oil in a pan
Splutter mustard seeds and cumin seeds
Roast dried chillies and curry leaves
Add the peppercorns too
Turn off the flame when it turns fragrant
Add this tempering to the millet-curd mixture
Mix well
Serve this delicious and nutritious dish with salad.
