Keto cauliflower fried rice

This delicious cauliflower fried rice can be tried by those who follow the ketogenic diet in which food containing low carbohydrates and high fat are included. It is incredibly easy to prepare and is packed with lots of vegetables as well. Check out this simple recipe.

Ingredients
2 cups cauliflower rice
2 eggs
2 tbsp olive oil
1 tsp vinegar
1 tbsp soy sauce
1 tsp black pepper powder
Salt, as required
Finely chopped vegetables of choice
1 tbsp garlic (finely chopped)
2 tbsp onions (finely chopped)
2 green chillies (finely chopped)
2 tbsp red, green and yellow capsicum (finely diced)
2 tbsp carrot (finely chopped)
3 tbsp cabbage (finely chopped)
2 tbsp spring onion (finely chopped)

Preparation
To prepare the cauliflower rice, first wash the cauliflower flower in salt water and turmeric powder. Scrape these florets into small bits
Heat a pan and add the cauliflower bits
Stir until the water gets evaporated and cauliflower is nice and toasty
Beat an egg with black pepper and salt in it and keep this aside
Heat olive oil in a pan and add garlic
Lower the flame and sauté the garlic for a minute
Add the onions and green chillies and sauté
Into it add carrots and sauté
Now, add the capsicum and sauté by adding salt as required
The vegetables should be lightly sautéed and not overcooked
Move the sautéed vegetables to a side of the pan and pour in the beaten egg
Stir gently until the egg is nicely cooked
Now mix the egg and vegetables together
Add half of the spring onions and mix well
Add a tea spoon of black pepper powder and mix everything well together
Now, add the previously prepared cauliflower rice and mix
Add vinegar and soy sauce
Mix and cook for at least two minutes
Sprinkle the rest of the chopped spring onions and turn off the flame.
