Try this super spicy kanthari alfam from Kochi

The credit for giving the good old alfam chicken a spicy makeover goes to the KR Bakes at KK Road in Kadavanthra, Kochi. Adding a Kerala twist to the popular Arabic dish, it has been prepared by marinating whole chicken with spicy bird eye chillies.

Whole chicken is marinated with salt, pepper and special Arabian spice mix and is kept aside for at least 12 hours. This marinated chicken is then half baked without adding any oil. Meanwhile, a super spicy bird eye chilli paste is prepared, that has amazing flavour.

The baked chicken is coated with the bird eye chilli paste and is kept aside until they are grilled as per order. Fluffy Kuboos, sweet and sour mayonnaise or a flavoursome garlic paste usually accompanies this kanthari alfam.

The bird eye chilli paste gets crispier on the chicken skin, adding oodles of flavour and texture. Besides, the meat would be so tender and juicy that it can be enjoyed even without the accompaniment of any side dishes.
