Mornings in most kitchens are a race against time. To make things easier, many people chop onions, garlic and other vegetables in advance and refrigerate them for later use. Storing cut onions in the fridge is generally safe, but only if they are handled and stored properly. Leaving chopped onions uncovered inside the refrigerator is not a good idea. Here is how to store them the right way and how long they actually last.

  • Once you chop an onion, transfer it to an airtight container or seal it inside a ziplock bag before placing it in the fridge. This prevents the strong smell from spreading to other food items and also protects the onion from contamination.
  • Chopped onions can remain safe in the refrigerator for about seven to ten days. However, for the best flavour and quality, it is advisable to use them within three to five days. The longer they sit, the more their texture and taste begin to deteriorate.
  • Because onions contain a high amount of moisture, there is always a risk of mould forming if excess moisture collects in the container. Placing a piece of tissue paper at the bottom of the container can help absorb this moisture and keep the onions fresher for longer.
  • It is important to refrigerate chopped onions within two hours of cutting them. Leaving them out at room temperature for too long can encourage bacterial growth, especially in warm and humid conditions.

There is also a widespread belief that cut onions turn toxic if stored. Experts say there is no scientific evidence to support this claim. That said, the quality of the onion does decline over time, so it is best not to store it for too many days.

How to make them last for months
If you want to store chopped onions for a longer period, spread them out on a tray and place them in the freezer for one to two hours. Once they are partially frozen, transfer them to a ziplock bag and store them in the freezer. They can be used for cooking for up to two to three months, although they are not suitable for salads after freezing.
