Dhaba-style bhindi masala

Ingredients
15 lady fingers
1 onion
1 tomato
1 small piece ginger
3 green chillies
1 cinnamon stick
1 clove
1 cardamom pod
1 bay leaf
1 tbsp turmeric powder
½ tbsp coriander powder
½ tbsp Kashmiri chilli powder
1 tbsp gram flour
½ tsp cumin seeds
1 small cup yoghurt
½ tbsp sugar (optional)
3 tbsp oil
Juice of half lemon
Salt as required

Preparation
Cut off the ends of the lady finger and split them in half
Marinate them with ½ tbsp turmeric powder, salt and lemon juice
Grind tomato, garlic and green chillies
Into it add turmeric powder, chilli powder, coriander powder, gram flour and some salt
Blend well into smooth paste
Heat oil in a pan and lightly fry the marinated lady finger pieces
Transfer them into another vessel
In the same oil sauté cinnamon, clove, cardamom, bay leaf and cumin seeds
Add the masala paste
Sauté on low flame
Add onions and sauté well
Now add the tomatoes
Sauté until the oil separates
Into it add the yoghurt
Stir on low flame until the oil separates
Finally add the fried lady finger pieces
Cook for a minute with the lid on
Give everything a good mix
Add sugar if required to balance the flavours
Serve hot.
