Black-eyed peas and vegetable salad

A quick salad with the goodness of veggies and protein-rich pulses to get you off to a great start. Filled with healthy elements and enough antioxidants to keep you running through the day.

Ingredients
40gm fresh lemon juice
2gm salt
2gm pepper
2gm mustard paste
30gm olive oil
90gm broken wheat, cooked
175gm black-eyed beans/van payar, cooked
150gm yellow capsicum, chopped
40gm onion, finely chopped
40gm fresh chives, chopped

Preparation
Mix the first four ingredients in a large bowl
Add oil, stirring with a whisk
Add broken wheat and the remaining ingredients. Toss well. Cover and chill
20gm fresh parsley, chopped
2gm fresh thyme, chopped
425gm chickpeas, boiled
425gm kidney beans, boiled
