Grated carrot and raisin salad

Carrots with their vitamins and walnuts with their incomparable goodness make for a great crunchy salad that can be made within minutes.

Ingredients
3 cups grated carrot
1 ½ cups minced onion
½ tsp fresh/dried herbs
¼ cup raisins
1 tsp balsamic vinegar
1 tsp water
1 tsp chilli flakes


Dressing


½ tsp lime juice
4 tbsp olive oil
¼ tsp salt (optional)

Preparation
In a serving bowl mix together the grated carrot and onion along with the herbs. Leave to chill
In a small saucepan heat the balsamic vinegar and water along with the raisins and chilli flakes
When the raisins have absorbed all the balsamic vinegar, and there is no liquid left in the saucepan, remove from fire and leave to cool.
When it has cooled well, add to the chilled carrot.
Make a dressing by shaking up the jam jar with the lime juice and olive oil. Taste it and add salt if needed

Notes
The balsamic vinegar has a salty taste, so it is personal preference if you prefer to add salt to the dressing.
