Vegetable stuffed omlette

An easy yet healthy tiffin box option for kids, this omelette, in all its colours compels your child to devour her lunch/snack.

Ingredients
4 tsp olive oil/vegetable oil/melted butter
¼ cup large onions finely sliced
3 tbsp capsicum finely sliced
¼ cup cut mushrooms
Salt and black pepper powder, as required
A pinch of Italian seasoning
(A powder made by mixing black pepper and herbs like basil, thyme, oregano, rosemary. Available in the market)
3 tbsp tomatoes cut and grain removed
4 small or 3 large eggs
2 tsp milk
Salt and black pepper powder, as required
2 slices cheese  

Preparation
Heat 2 tsp oil in a pan, add large onions and sauté
Add capsicum and mushroom to it and sauté for 2-3 minutes
After the vegetables are sautéed, add salt, black pepper powder and Italian seasoning to it and mix well

Add tomatoes and remove from stove. The filling is ready
Break the eggs and pour into a bowl. Add milk, salt and pepper, and beat till it foams well
Heat a 10 inch size pan. Heat 2 spoons of olive oil in it

Pour the beaten egg into it and cook it with the lid on over low flame
Spread the filling on one side of it when it is almost done
Place the cheese slice over it and fold the omlette

Switch off the stove when the cheese melts and transfer to a plate to serve hot
