Cauliflower soup: Cauliflower florets + Butter + Seasonings
Chop cauliflower into small florets
Bring 4 cups of water to a boil
Stir in 2 tsp of salt
Pour in the cauliflower florets
Bring the water back to a boil and cover
Let the cauliflower cook for about 5 minutes till very soft and tender
Remove the florets from their cooking water; reserve the water
Place the cooked cauliflower into a blender, filling it halfway
Pour in cooking water, adding till it reaches about halfway up the cooked cauliflower
Cover the blender carefully and blend, scraping the sides as needed, until the soup becomes a smooth puree
Add salt, pepper, and butter to taste
Banana pancake: Banana + Egg + Coconut flour
Preheat a non-stick skillet over medium heat
Place the bananas, eggs, coconut flour and 2 pinches of salt in a blender
Puree until smooth
Brush the skillet lightly with coconut oil
Pour in a circle of batter and shake the skillet gently to spread the batter
Cook for 2-4 minutes until the bottom of the pancake is golden-brown and the edges are firm
Flip gently and continue cooking another 2-4 minutes
Banana pudding: Milk + Banana + Chia seeds
Blend the almond milk and bananas in a blender until smooth
Stir in the chia seeds
Refrigerate in an airtight container for at least 4 hours (to give the seeds enough time to plump up) and up to overnight
Serve with banana slices on top.
