A perfect snack to be had with piping hot tea, spinach or palak bajji is crunchy, delicious, and full of iron and spinach goodness. Try out this simple recipe of spinach bajji.
Fresh spinach as required
½ cup gram flour
½ cup rice flour
½ tsp chili powder
Salt as required
½ tsp asafetida powder
A pinch of soda bi carbonate
½ cup water
1 tbsp white/black sesame seeds (optional)
Oil to fry
Wash the spinach leaves and pat them dry
Mix gram flour, rice flour, chili powder, salt, asafetida and soda bi carbonate in a bowl
Pour water and mix into batter without forming any lumps. Add sesame seeds if required
Heat oil in a pan. Dip each spinach leaf in the batter and fry in hot oil
Serve hot with coconut or coriander chutney.
