Ingredients
1 ½ litres milk
250 gm sugar
200 gm paneer
2 tsp ghee
Cashews
Raisins
Pistachios
A pinch of salt
Preparation
Boil the milk with sugar
Roll the paneer into small balls
Heat ghee and fry the cashews, raisins and pistachios
Add this along with the paneer balls into the boiling milk
Cook this on simmer with the lid on
After the paneer balls have cooked well, take off the lid and allow the milk to thicken
Add half more litre milk into it and continue boiling
Add salt as well
When the milk thickens up to the right consistency, turn off the heat
This payasam tastes best when served chilled
Add rose water or saffron for extra flavour and fragrance.
Notes
Mix the paneer well before making small balls. Mashed paneer too could be added. Homemade fresh paneer elevates the taste and texture of the payasam.
